I use google docs when writing, and my chrome has a permanent spellcheck and grammar check active. But what I do, before writing anything, is getting down every detail for each and every single story. I keep a notebook that has everything written down for current and future stories. It's how I keep track of everything, makes it easier. As for you, I would use the whole italiacs when it comes to thoughts.
You use the <> when putting words in bold, italiacs, and underline. It's "b" for bold, "i" for italiacs and "u" for underline.
It can be annoying when having to correct everything, as large documents can get tricky as you'll have to keep track of everything. And another bit of advice? Keep a dictionary and thesaurus by your desk when writing. Also, to separate paragraphs, they're marked the same way, <> but you put a 'p' in between the <> and add a slash when ending the paragraph.
Of course, you can always look the HTML codes up and write it down on a sticky note. Though, if you keep notes, I'd stick with a sturdy notebook like Moleskine. It might be pricier, but they do last for a long, long time.
