When she says she wants to take him, she wants, deep down, even if she doesn't recognize it yet, to make him a "trophy husband", as that's how he, at the time, would have seen whoever his wife would have been.
With her now twisted crush mixed with the real her being rejected, Mulan finally snaps, ready to take down the emperor and become the new empress, upgrading Shang from a trophy husband to a concubine and forcing him to watch all of China fall under her control."
