Summary
The thing Gandalf neglected to mention when he assured Thorin Oakenshield and Company that Bilbo Baggins of Bag End would be the perfect thief for their mission was this:
A Hobbit wouldn't be able to tell a diamond from a pearl, or from an Arkenstone - no matter how hard they try.
This leads to some confusion, on Bilbos part. And some frustration, again on Bilbos part.
(What sort of a description was 'heart of the mountain', anyway? A useless one, that's what.)

Bilbo has not caught something since he was a lad and accidentally caught the flower that Bertie Proudfoot was tossing to see if anyone was interested in her. It had taken a lot of practice and restraint but he was quite proud of the fact that he no longer flinched when someone threw something at him. For even that sort of reaction meant something to the hobbit tossing their heart. And while he’d always been careful to never throw anything that someone might be able to catch, he couldn’t have prepared himself for their quest.

Bilbo Baggins may be an odd hobbit in character, even for a Took, but he is very common in looks. He never was ugly, nor was he ever handsome and at no time had he really thought anything of his looks.
He only starts to overthink it when the dwarrow of the newly retaken Erebor can't seem to stop looking at him.

Summary
There is more wealth to Erebor's lands than its gold and gems. All it takes it the nurturing hand of a hobbit to allow the Lonely Mountain to flourish.
It was easy to ignore the other dwarves staring at him. They were like faunts, really. Normally, they would turn their nose up at anything that didn’t bleed upon their plates. It had not taken him long to work out that if he pretended to hoard the vegetables, the rest of the Company decided they were missing out on something.
